Sweet Potato Souffle
This is a Southern US dish and is therefore very sweet. It's fabulous with roast turkey.
Serves 6
3 cups cooked sweet potato (about 2 large ones - peeled and boiled)
2 eggs
3/4 cup sugar
1/2 tbsp vanilla essence
1/2 cup milk
Streusel topping:
1/3 cup plain flour
1/2 chopped pecans
1/2 cup cold butter in cubes
1 cup brown sugar
Set oven to 175C (350F).
In a large mixing bowl or electric mixer, combine the sweet potato, eggs, sugar, vanilla and milk til smooth. Pour into a 20 x 20 cm low casserole dish.
In another bowl mix the flour, pecans and brown sugar. Add the cold butter and with your hands, try to crumble the mixture through your finger tips. Scatter the streusel topping over the sweet potato mixture and cook for 45 mins to an hour on the middle shelf. The topping should spread out and be crisp.
