Sukkuladi Mousse (makes 4)
This will sort the men from the boys, and the women from the girls. How to make a simple chocolate mousse. Before you turn away you only need three ingredients:
150g dark sukkuladi (that's chocolate to foreign readers) 70% cocoa, broken up
4 Eggs, seperated, at room temperature (salmonella free are best)
Air (that's free, even in Iceland)
Melt the sukkuladi in the microwave, beating it until it's a liquid. It will take a few seconds to melt so don't go anywhere. Set aside to cool so it's lukewarm but still a liquid.
Then in a large bowl beat the egg whites until they form stiff peaks. In a different bowl, beat the yolks and add the chocolate. Gradually fold the egg whites into the chocolate (folding means using a large metal spoon and making a big figure of eight, ie absolutely no mixing, you are trying to get air into the mousse).
Distribute into 4 cups and put into the fridge for 1 hour. Simple.
