No Yeast Blinis


Most recipes for blinis include yeast, but after a quick blini tasting comparison, the no yeast recipe came out on top.


2 tablespoons buckwheat flour
3 tablespoons white flour
1 teaspoon sugar
pinch baking soda
pinch salt
1/4 cup milk
1 egg, separated
Chunk butter, melted and cooled


Mix together dry ingredients in a bowl. Add milk and egg yolk and mix until smooth. Whisk egg white in another bowl until soft peaks form. Fold into batter along with 2 tablespoons melted butter. Brush a 12-inch nonstick frying pan with some of remaining melted butter, then heat over medium heat until hot. Drop 1 level tablespoon batter per blini into pan and cook until bubbles appear on surface and undersides are golden, 45 seconds to 1 minute. Flip over and cook 1 minute more.

Serve with creme fraiche and smoked salmon and/or caviar. Garnish with dill, few drops of lemon and black pepper.
