Fjallagrasamjólk -  Lichen Soup 

 

Here's something novel. Fjallagros is a lichen (not a moss) which grows out on the moors here and it makes a rather easy, filling (and apparently healthy) soup. It's a sweet, milky soup so I would suggest this as a late supper - you don't need anything else to go with it. You can buy fjallagros in Heiluhusid and large supermarkets in Iceland and it's not particularly expensive.

Serves 2

1 litre milk

1-2 handfulls of fjallagros

2-3 tbsp brown sugar

half a tsp salt

 

Put the milk in a large saucepan and heat. Pick through the fjallagros and take out any bits of green moss. Rinse it and then chop roughly. Once the milk is boiling, add the fjallagros, and let it boil away for 2-3 mins, stirring and checking to make sure it doesn't boil over. Stir in the sugar and salt and take off the heat. Pour the soup through a sieve to remove the squidgy lichen and any dirt. Serve straight away.
