Easy Banana Bread

An easy recipe for Banana Bread when you've loads of old bananas to use up. The recipe is made easier by using vegetable oil instead of butter, but the taste is still excellent. Makes 2 loaves.

 
Ingredients

3 cups plain flour

2 tsps bicarbonate of soda (baking soda)

1 tsp cinnamon

1/2 tsp salt

4 eggs

1.5 cups sugar

1 cup vegetable oil

3 cups mashed ripe bananas (6 large)

1/2 cup creme fraiche

2 tsps vanilla essence

1 cup toasted and chopped walnuts

 

Pre-heat oven to 175 degrees Celsius (350 F).

Mix flour, bicarbonate of soda, cinnamon and salt in a small bowl.

In a bigger bowl, beat eggs and sugar together til thick and pale - about 10 mins in mixer or 15 mins by hand. Gradually mix in oil, then bananas, creme fraiche and vanilla.

Fold in flour mixture and walnuts, and then quickly pour into both tins. (For a chocolate version, mix in 1 tbsp cocoa powder into half of the cake mix).

Bake in middle of oven for between 1 and 1 1/4 hours, or until a sharp knife comes out clean.

Cool loaves in tins on a rack for 10 mins, then turn out onto a cake rack. Turn once whilst cooling.
