Best Ever Cauliflower Cheese

 

For years I thought the traditional Cauliflower Cheese recipe of bechamel sauce and a lot of cheese unbeatable. That was until I tried this version, concocted by Jamie Oliver and modified by me. Although adding anchovies does seem strange, it really gives an incredible savoury, salty kick that you would never know came from a fish.

Serves 4

1 cauliflower, cut into florets

1-2 sprigs fresh rosemary, chopped

2-3 anchovy fillets, very finely chopped

500ml creme fraiche

150g Cheddar cheese or similar, grated

1 rasher of bacon, chopped

4 slices stale bread, cut into cubes

 

Boil the cauliflower florets for 5 mins in salty water til very soft (best to over-boil rather than under-boil in this dish). Drain and pour them into a casserole dish. Mix the anchovies and the cheese into the creme fraiche and pour all over the cauliflower. Blend the stale bread, bacon and rosemary til very fine crumbs and sprinkle on top. Bake in the middle of the oven at 175 degrees for 50 minutes.
